Burbot, also known as "Poor-man's lobster" because of its distinct lobstery flavor, is a sought after game fish that is found only in more northern areas. It is a long fish with a continuous dorsal fin that extends almost the entire length of its back. It has a base color of yellowish-white that is scattered with greenish-gray splotches that provide it with excellent camoflage. The largest Burbot ever caught weighed in at just over 25 lbs.
